Scones
A scone is a single-serving cake or quick bread.
Scones are made of wheat, baking powder, milk or buttermilk, sugar and butter; frequently they include raisins.
Usually they are served with butter and raspberry jam and a cup of tea.

Serves: 16 scones
Ingredients

Salted butter : 150 g

Self-raising flour : 560 g

Raisins : 120 g

Milk : 300 ml

Baking powder : 16 g

Sugar : 60 g
- A little extra milk for glazing
Directions

Set oven to 220°C.

Sift together into a bowl the flour and the baking powder and add the sugar.

Chop the butter into the mixture bowl.

Knead until the mixture resembles breadcrumbs.

Add the raisins, milk and stir well with a knife to form a soft dough.

Leave to stand 3 minutes.

Turn out on to a floured surface and form a round about 2 cm thick.

Cut into 8 cm rounds.

Place on a greased baking sheet and glaze with a little extra milk.

Dust the scones with flour.

Bake for about 12 minutes or until well risen and golden.
- Serve warm or cold.
